Back from my first day in my new job I enjoyed a glass of red wine on my balcony this evening together with a delicious Italian pasta salad.
Sometimes there are evenings where I’m not very hungry or I’m still satisfied from the day. Then I love to eat a simple and delightful salad with a home-made dressing. Yesterday was one of these evenings and I decided to make a salad with sprouts in combination with raspberries and cashew nuts and a dressing with raspberry vinegar. The sweet raspberries went perfectly well with the flavour of baby spinach and the spiciness of rocket. This salad is a colourful and flavourful meal or sidedish.
